My mouth is watering just typing out this recipe! When my husband and I work a 12 hour shift, we really don't feel like coming home and making a huge dinner. And let's face it, I don't like making dinner period. Enter ... drum roll, please ... these easy chicken tacos!
The best part about this, is that there are very little ingredients involved. All you need are soft shell tacos, 1/2 brick of cream cheese, 1/2 can of queso dip, 1 can of rotel, and chicken breasts.
This is where my husband and I differ - he likes to throw the chicken in whole, and I like to cut mine up with kitchen scissors first. But either will work.
Take all the ingredients, throw them in the crock pot, and turn it on high for 5 to 6 hours, stirring occasionally. You can add some shredded cheese if you like. That's it! We use one package of chicken breasts and it makes enough for leftovers the next day.
I like to eat mine with a little sour cream on it too, while my husband adds shredded cheese to his. If you use the low fat options of a lot of these items, you can definitely cut down on some calories as well! Let me know if you try this out, or if you have another easy crockpot recipe!
