Low Calorie Banana Pumpkin Muffins

Low Calorie Fall Snack

Who doesn't love a good low-cal recipe? And if it's easy to make, then even better! My sister and I discussed that when we get a sweet tooth craving, it's so hard to satisfy that with something low calorie AND that tastes good. It's just a hard combo to find.

Enter ... (drumroll please) ... Banana Pumpkin Muffins!

These babies are so easy to make, and only 65 calories per muffin. Yes, you read correctly. Only 65 calories. You can eat 2 of these for breakfast and still only be at 130 calories for the day. Which, by the way, is my plan for tomorrow morning :)

For this recipe, you will need: 

Low Calorie Pumpkin Recipe
 Preheat your oven to 350 degrees.

Mix all the ingredients together in a large bowl. I recommend mashing the banana before putting it in. I also use my stand mixer to make it nice and smooth.

Pour the batter into cupcake tins. I used paper liners for mine, but because of the nature of the recipe, they tend to stick to the paper. You may be better off spraying your pan with Pam and pouring the batter directly into the pan with no liner. You can use an ice cream scoop to make this easier. 

Bake for 20 - 30 min or until moist. I ended up baking mine for about 22 min, but my oven tends to over cook things.

  6. Hmmm and if you use Splenda instead of sugar that should lower the sugar a bit as well. I might try these!
