Have you ever bought supplies to bake something, and then plans change and you never actually bake it? That's what happened to me. I just never got around to baking what I had planned to. Then before I knew it, the cream cheese I bought for that recipe was about to expire. So I went to Pinterest looking for an easy recipe to use it up. My husband loves cheese cake, and these looked simple enough and would use all the ingredients I had purchased. They didn't turn out the prettiest on the outside, but man do they taste good!
Baby Cheesecake Cups
2 8oz packages of cream cheese
2 eggs, beaten
1 tsp vanilla
3/4 c sugar
1 tbsp lemon juice
18 vanilla wafers or
1 sleeve graham crackers
6 tbsp butter, melted
Preheat your oven to 360 degrees. You'll then make your crust first. The recipe called for 1 vanilla wafer for each individual crust, but I didn't have that. So I made my own graham cracker crust. You can do either. I finely crushed a sleeve of graham crackers and mixed it well with 6 tbsp of butter that we melted. I filled 21 cupcake liners with this.
Beat cream cheese, eggs, vanilla, sugar, and lemon juice. Make sure the eggs are beaten before you add them in, I forgot this step and I think thats why my batter was a little lumpy.
Pour the batter into the cupcake cups over the crust. Try to even out the top as best you can. I filled 21 cups full. Bake for 12-15 min (I did 12). Let cool, and then refrigerate for a few hours. Add your desired topping - I used Strawberries!
